Hello everyone! My name is Gabriela Todorova and I am going to present you one traditional Romanian dish which is also very popular in Bulgaria. I know from my grandmother that Mamaliga is a traditional Romanian dish that gained great popularity during the Romanian occupation of Dobrogea  and she took part in it. In the village of Nova Cherna(my village) they are preparing for the Mamaliga Festival, scheduled for October 6, and keep a recipe for its making from 1750 .

The festival also has a competition for authentic clothing, singing and competing of Bulgarian and Romanian art groups. I never took a part in that festival but I was in the audience and I enjoyed every moment of it. I tried a lot of dishes prepared in different ways. Its purpose is to preserve and promote folklore through song, dance, whistles, speech and food, to achieve continuity between generations. The festival stimulates the search, preservation and dissemination of authentic customs, songs, whistles, games and recipes typical of the settlements of different folklore areas, encourages the participation of creative teams and performers of authentic and processed folklore.

It (Mamaliga) is prepared from corn flour and I really like to eat it with yougurt. There are several options for serving already cooked mamaliga. According to some, it is served with a topping of paprika, oil and cheese. It can also be consumed dipped in fresh milk. In Bulgarian cuisine, such preparation of this equivalent of bread is called porridge(kachamak). It is prepared from corn flour with the same technology of boiling over a “low” heat until a thick consistency is achieved. It is served as a mamaliga with butter, cheese and red pepper or as threaded pieces for consumption with vegetarian or other dishes.

My cultural treasure is important for me because it makes me feel proud that I am Bulgarian girl I wouldn’t change that for anything.

How is youth connected to your cultural treasure?

I think that the young people are holding the future in their hands.

Is the cultural treasure you want to share typically only in your country?

No its not. It is traditional Romanian dish.

How to preserve and pass on cultural heritage to younger generations?

The easiest way is to do the things with modern elements which will attract them.

What is the way to give our knowledge to younger generations (educational system, youth festivals and holidays)?

All of them!
